Ham and Broccoli Quinoa Bites

I can't be the only one with one hell of an Easter candy hangover, right? 

(And maybe a little bit of a real hangover, too - but long weekend!)

Every year, I think that I could never ever possibly get sick of eating Creme Eggs, Mini Eggs, and all the other chocolate that comes my way during Easter. And then every year I do get sick of it, and I need to detox and get back on track with healthy(ish) eating.

These ham and broccoli quinoa bites help me do just that. Vitamins, minerals, and protein galore, they're the perfect post-Easter lunch or dinner. And anything that helps us use up Easter dinner leftovers is awesome, too.

How do you detox from the great candy holiday?

Ham and Broccoli Quinoa Bites

Yields about 2 - 2 1/2 dozen.

3 cups cooked quinoa (about one to one and a half cups uncooked)
2 eggs
1 cup ham, finely diced (deli or otherwise)
1 1/2 cups finely diced steamed broccoli (I use leftovers from dinner)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup breadcrumbs
1 1/2 cups grated cheese (I use about 3 parts cheddar, and 1 parts parmesan)

Preheat oven to 350F and grease or line two mini muffin pans (one will do, if that's what you have).

In a large bowl, combine all ingredients except for the quinoa. Mix until well combined - it will almost resemble a paste. Mix in the quinoa until well combined. Scoop into mini muffin tins, packing down slightly.

Bake for 15 - 20 minutes. They'll be cooked through and a light golden brown on top. Remove from oven and allow to cool before removing. When removing, carefully separate the edges from the pan with a knife, then carefully pop out from the bottom. Best if served warm!
