No-Bake S'mores Bars

The boyfriend has been bugging me for ages to make him rocky road bars. For ages! This resulted in a disagreement over what rocky road actually was (nuts or no nuts?! brownie or chocolate square?!) and the best method to prepare it. 

These no-bake s'mores bars shut us the hell up.

They're so easy, so quick, and so tasty that we completely forgot about wanting rocky road, and happily devoured a tray of these instead. The total prep time is about 15 minutes, and if you don't mind them being a bit warm and goopy, they can be eaten right away. I suspect they'd also be super tasty made into s'mores ice cream, which I think is my next project...

No-Bake S’mores Bars
adapted from Real Mom Kitchen

1/2 cup heavy whipping cream
1 3/4 cup semi-sweet chocolate chips
4 cups mini marshmallows
1 cup graham crackers, broken into small pieces

Grease a 9x13 (or thereabouts) pan, or line it with foil.

In a medium sauce pan, heat the cream until it begins to bubble around the pan’s edge. This happens quickly, so watch carefully.

Remove the pan from the heat, and stir in the chocolate until smooth. Let sit, stirring occasionally, until it’s cool to the touch.

Gently mix in the marshmallows until coated with chocolate, and then stir in the graham crackers until everything is nicely mixed.

Scrape mixture into your greased pan, and pat down using wet hands so it fits the pan nicely without air bubbles messing everything up.

Stick it in the fridge for 2 or so hours to firm up. Cut and enjoy!
