Cupcakes of the Morning

I do like to balance all the sugary goods with the odd wholesome baking item every now and then. These muffins are a mix of a few recipes, basically adapted to what I had in my cupboards. They're perfect to take to school/work or throw into the boy's lunch. (Especially the minis!)


1 1/4 cups whole wheat flour
1/2 cup bran
1/2 cup oatmeal
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 egg
1/3 cup brown sugar
1/3 cup vegetable oil
1 mashed banana
1/2 cup grated apple
1/3 cup buttermilk
2 tbsp molasses

Combine the first six ingredients in a bowl. Stir well to blend.

Beat the remaining ingredients together in a separate large bowl.

Add the dry ingredients, stirring until just blended.

Spoon into lined or greased muffin cups and bake at 375 for 20-25 minutes.
