Your cake to have memorized for when you get a call and someone from out of town or wherever is going to be popping by.
Instead of turning off the lights or making up a contagious disease, just pop this quick dairy free and egg free cake in the oven so a) your house will smell delightful and b) you will so easily impress and wow everyone with your baking prowess and domestic goddessness.
Rosette Swirl Quick Company Cake
1 1/2 cup flour1 cup sugar1/3 cup cocoa powder1 tsp baking powder1 tsp baking soda1/4 tsp salt3 tbsp oil1 tbsp vinegar1 tsp vanilla1 cup lukewarm water
Directions:Preheat oven to 375F.
Prepare 8 or 9 inch round baking pan by greasing and coating in a light dust of cocoa powder. Set aside.
1. Sift dry ingredients into a medium bowl.2. Make 3 wells in mixture, filling the first with the oil, the second with vinegar, and the third with vanilla.
3. Pour water over mixture and mix thoroughly with a fork. Bake for 20-30 minutes, checking frequently towards the end. When ready, a cake tester or knife will come out clean.
4. Let rest in the pan for 5 minutes, then invert onto a baking tray and let cool while you prepare the icing.
3/4 cup butter, room temperature
3 cups icing sugar (give or take a half cup)
1 teaspoon vanilla
1 tablespoon cream
pink or red food colouring
While the cake is cooling, cream together the butter and icing sugar in the bowl of a stand mixer. Add the vanilla and food colouring. If the mixture is too thick (you'll want it to pipe nice and smoothly) add some cream until the desired consistency is reached. Set aside (covered) until the cake is coolish to the touch.
AssemblyYou will need:
Your caked and mostly cool cake layer
Batch of buttercream
1 Pastry Bag
1 Rose icing tip
Scoop the icing into the pastry bag with the rose icing tip attached securely. Follow rose piping directions from here (it's super easy, just pipe up and then swirl around). I recommend doing a few practice roses on a plate, but remember if you mess any up, you can just scoop the crappy rose off the cake with a knife. Easy peasy. Pipe the roses in an outward circle starting in the middle of the cake. Use a knife or spatula to smooth the edge when you are done. Don't worry if some of the roses get cut off/smooshed. It'll look great.
Voila! An easy and impressive cake ready in about 45 minutes.
