Vegan Peanut Butter and Oat Breakfast Bars

Can we talk about mornings?


Mainly how much I think they suck. (Because they totally do).

I'm a frizzy, sweaty, cranky mess that needs at least 30 minutes of silence and alone time before I transition into a functioning human being.

It's why I have a Tassimo. It's why I take long leisurely showers. And it's why I make up for my surly AM demeanour with some kick ass breakfasts.

Because if I can't be a morning person, I can at least be a breakfast person, right?


These peanut butter and oat breakfast bars are vegan, full of protein, and topped a hint of chocolate to make you feel like you're getting a bit of a treat. If you need a nut-free breakfast bar, I've also made this recipe with sunflower butter and they turned out equally delicious.

Self-Saucing Vanilla Fudge Pudding Cakes

Some things just taste like home


And happy memories. Just like these self-saucing vanilla fudge pudding cakes.

One bite and I'm instantly transported back to the big, fat, overstuffed wicker chairs in my parent's living room, curled up with a good book and a big bowl of fudge self-saucing pudding cake to wash away another rainy day.


This recipe is an updated version of my childhood classic, with slightly less sugar and made in single serving dishes for extra cute and convenience. My family gobbled them up soon after they were made, creating another generation of happy pudding cake memories.

Recipe Retake: Healthy(ish) Cinnamon Rolls

If I had to pick some of my favourite recipes of all time, Healthy(ish) Cinnamon Rolls would be near the top of the list. 


These have been a breakfast staple in my life since childhood, and I've yet to find a recipe that comes close.

Full of cinnamon sugary goodness, waking up to a batch of these is almost as exciting as waking up to bacon. You could always drizzle some icing on them, but then they wouldn't be as healthy(ish). I also find they don't need it to begin with.
