Homemade Cadbury Creme Egg Mini Cups

I'm not quite sure what I've created here.


A homemade Cadbury Creme Egg in a mini cup, yes. But beyond that, this sickly sweet creation makes a seasonal dessert attainable all year round - and I'm not sure how to feel about having that access. Is it sacrilegious? Is it messing with perfection? I don't know, but it's hard not to like it when it feels so good.

(And yeah, those of us in the know are well aware that the precious creme eggs can be found year-round in dubious corner stores, as long as you don't mind questionable food safety practices or best before dates).

Either way, this recipe for mock creme eggs is as close to the real thing I've found so far. I much prefer the store-bought version, but this one definitely does the trick, too. And they look so cute!

Cadbury Creme Egg Brownies

I have made a lot of brownies. 


I have made brownies with chocolate chips, with marshmallows, with candy and Reese's, and sometimes, with nothing added at all.

But I have never made a brownie as delicious as these.


Ooey, gooey, and fudgey brownies with a surprise topping of Cadbury Creme Eggs to help you get in the Easter spirit.

A little less twee than bunnies and eggs slathered in pastel. And that's just the way we like it around here.

No-Bake Peanut Butter Balls

And now for something completely different: A raw, vegan, no bake peanut butter ball recipe. Ready in less than 10 minutes (not counting the time it takes to get the damn peanut butter jar open).

I added chocolate chips, but nearly anything can go in these guys. Dried fruit, like dates and raisins, coconut, crushed nuts, you get the idea. They're completely customizable, and did I mention kid friendly? The boy and I will make at least a few batches of these during spring break next week. (Holy crap - how is it spring break already?!)

Light and Creamy Chicken Pasta

Every now and then I make something the whole family scarfs down and I think "YES! It doesn't get any better than this!" Then I feel kind of pathetic and vow to go out more.

There's nothing like a meal that lets you use up spare food in your fridge and freezer, and that's exactly what this pasta lets you do. I used peas and chicken, but if you have other things you'd like to use up - have at it!

Cake Batter Cupcakes (and a happy blogiversary to me)

 Sometimes things just need to be cute.


And tasty. To be honest, most of the time just tasty will suffice.

But then you'll come across some especially adorable cupcake wrappers, think of how cute they'd be for a birthday, then realize you've forgotten your own blog's birthday, like the worst blog parent ever.

So, blog, I'm sorry. It's been three crazy years, and I still love you like yesterday.



Don't let these cupcakes fool you though - they aren't nearly as sickly sweet as they look. The cupcake is moist with a perfect crumb, tasting of vanilla instead of just sugar. The sprinkles add a little bit of whimsy, and paired with a classic buttercream, it's absolute heaven.

But don't just take my word for it, make them for yourself and have your very own celebration!

Mini Apple Pies

Shhhh... can you hear that? We're having a weekend-long rain storm in Vancouver.


Know how I know? Well, from the weather channel, but also because I, a born and bred Vancouverite, actually noticed it was raining for once. 

It might be because I'm to rain what Bane is to darkness, but I find a downpour cozy and secure. I love that gentle plinking against the window. Rainy days expect less from you. They let you slow down, catch up on emails. They let you brood, or cuddle. They don't impose themselves on you like sunny days. 


And these mini apple pies are perfect for days like today. But I can't take credit for them - the idea came from the boy. Because who else other than a 6 year old can think up something so simple, perfect, and comforting? With just two ingredients you'll have a dessert that tastes like you put in a ton of effort. (But that can wait for a sunny day).
