Apple Banana Muffins and a giveaway!

Move over, blueberry crumb muffins, because there's a new favourite muffin around here-- apple banana muffins.
This is one of those 'forever a bookmark but never a muffin' recipes, that finally got its chance to shine last week. And thank god, because it delivered. I've made a few attempts to write how delicious it is, but they ended up strangely creepy and erotic sounding, so just trust that they're amazing, okay? I made a few minor changes to include whole wheat flour, flax, and less sugar.

And now what you're actually here for: the giveaway!

Since I love all of you (even the ones who e-yell at me for the swears), I've decided to give away a copy of one of my favourite go-to baking books, The Williams-Sonoma Baking Book. Every recipe I've tried out of it is a winner, and I've posted about quite a few of them, so it just seems unfair not to pass on the love.

How do I enter, you ask? Here's how:

1. Leave a comment saying something. Your favourite recipe, what you'd do with the book (please no burning), a favourite post of mine-- really anything.

For extra entries:

1. Like my new Facebook page and indicate in your comment (or a new one) that you're a fan.
2. Tweet about the giveaway. Something like "I just entered to win the Williams-Sonoma Baking Book from @leannebakes http://leannebakes.blogspot.com/2012/02/apple-banana-muffins-and-giveaway.html". Again, leave a comment letting me know you did.
3. Share with you friends! Sharing is caring, so comment if you passed along.

Contest closes March 12th, 2012, and is open to residents of Canada and the US. Good luck!

Buttermilk Fried Chicken

It doesn't get much better than this, folks.
This buttermilk fried chicken is so good I don't mind that my house now smells of oil, and I'm certain it has soaked into my clothes and hair as well. (Fried chicken perfume?). It's so good I ate it for breakfast, and am sad my supply of leftovers is rapidly depleting. Crispy and tender, it's hands down the best fried chicken I've ever tasted.

This is one of many fried treats that will be making an appearance, because for Valentine's Day my boyfriend and I, ever the romantics, bought a deep fryer.

But even if you don't have a deep fryer, this chicken can easily be fried in a pan and be just as addictive and amazing. Try it as soon as possible-- you won't regret it.

Two-Bite Brownies

These brownies are so easy my 5-year-old made them. (Minus the butter melting, and the egg cracking).
This weekend we needed a treat. He wanted something familiar, and I wanted something slightly out of the ordinary. What was a mom and wee boy to do?

Make brownies in a mini muffin pan, of course.
They're ready in half the time, and are twice as fun. And they're great for tucking into lunch kits for surprise mid-day treats. I love them so much, I might give up traditional brownies.

Spiced Apple Chips

These spiced apple chips are a far and delicious cry from the subpar grocery store variety.

Crispy and sweet, with no added sugar and just a sprinkling of cinnamon and nutmeg, they make a perfect snack to satisfy midday (and late night) cravings.
Simple and delicious. And who can resist that adorable little star in the middle?

Peanut Butter Hummus

I don’t know about you, but sometimes I get snack fatigue. Trying to come up with new exciting and healthy ideas for the boy (and me!) can be exhausting, and even irritating. Faced with a near constant barrage of “I’m hungryyy!” every five minutes when the kid just ate is enough to drive anyone insane and drain all creative abilities. Thankfully my Mom has an arsenal of healthy snack ideas from when my brother and I were young-- and this one comes from her!

Hummas is great because it meets my healthy snack requirements, and you can dip a whole bunch of different vegetables into it, which makes it an easy way to get kids eating veggies and encourages them to try new ones. Hayden loves it with cucumber and carrots. This recipe is a great alternative if you don't have tahini paste on hand, although tahini paste works just as well.

I'm going to be posting more healthy snack ideas, and I'd love to hear yours, too!
