No-Bake Chocolate Peanut Butter Drops

What's a chocolate-obsessed and sugar-addicted girl to do without an oven? Well, bake muffins on the barbecue... but also whip up some no-bake cookies that are ready in minutes. 

If my oven had to break down, this is the perfect time of year. It's actually warm in Vancouver! (You know, by our standards...) and with such sunny days the last thing I want to do is turn the oven on anyway. 

These cookies are the perfect summer treat, and pack really well as a picnic snack for trips to the park or beach. They passed the son and boyfriend test (okay, most things do...) and barely lasted the day around here.

The boyfriend reeeaaally wished they had coconut, but agreed he likes me being alive more, so I left it out.  That being said, this is a pretty forgiving recipe, so feel free to add coconut, crunchy peanut butter, chocolate chips, or other ingredients you feel will give it the right blend.

No-Bake Chocolate Peanut Butter Drops

1 1/2 cups sugar
2 tbsp butter
2 tbsp cocoa powder
1/2 cup milk
1/4 tsp salt
1/2 tsp vanilla
3/4 cup peanut butter
2 ½ cups oats

Heat sugar, butter, cocoa powder, and milk in a medium saucepan over medium-high heat on the stove. Bring to a rapid boil and boil for one minute.

Remove from heat and mix in the salt and vanilla. Mix in peanut butter until dissolved. Quickly mix in oats until well combined.

Using a spoon, ice cream scoop, or cookie dough dropper (my fave!), drop the dough onto wax paper or foil and allow to cool.

  4. These looks like little bites of awesomeness! I especially love that they're no-bake. Like a fool, I've been baking and roasting up a storm over the past few sweltering days. I need to give my oven a rest by making these.
