What's a chocolate-obsessed and sugar-addicted girl to do without an oven? Well, bake muffins on the barbecue... but also whip up some no-bake cookies that are ready in minutes.
If my oven had to break down, this is the perfect time of year. It's actually warm in Vancouver! (You know, by our standards...) and with such sunny days the last thing I want to do is turn the oven on anyway.
The boyfriend reeeaaally wished they had coconut, but agreed he likes me being alive more, so I left it out. That being said, this is a pretty forgiving recipe, so feel free to add coconut, crunchy peanut butter, chocolate chips, or other ingredients you feel will give it the right blend.

Ingredients:
1 1/2 cups sugar
2 tbsp butter
2 tbsp cocoa powder
1/2 cup milk
1/4 tsp salt
1/2 tsp vanilla
3/4 cup peanut butter
2 ½ cups oats
Directions:
Heat sugar, butter, cocoa powder, and milk in a medium
saucepan over medium-high heat on the stove. Bring to a rapid boil and boil for
one minute.
Remove from heat and mix in the salt and vanilla. Mix in
peanut butter until dissolved. Quickly mix in oats until well combined.
Using a spoon, ice cream scoop, or cookie dough dropper (my
fave!), drop the dough onto wax paper or foil and allow to cool.

Have been keeping out of the kitchen a lot lately too...Talk about scorching heat! arrgh! Well, we still have to keep living, life goes on...thanks to no bake recipes and stuff that make me forget about the heat. I am an absolute PB lover. A must try! Thanks!
