These delightful lemons were a gift from my mother (yes, we gift with food!), and I knew they'd be absolutely perfect in our family recipe for lemon bars.
Just the perfect mix of sweetness and tang, I'm reminded that Summer is just around the corner.

Meyer Lemon Bars
Ingredients:
Crust:
¼ cup sugar
3 tablespoons butter
1 cup flour
Filling:
3 large eggs
¾ cup granulated sugar
2 teaspoons grated lemon rind
1/3 cup lemon juice (I always add more…
shh!)
3 tablespoons flour
½ teaspoon baking powder
½ teaspoon salt
Topping:
2 teaspoons icing sugar
Directions:
Preheat oven to 350F
To prepare the crust: Cream together sugar
and butter. Gradually add flour, beating at a low speed, until mixture
resembles fine crumbs. Gently press mixture into an 8x8 pan, and bake for 15
minutes. Cool.
To prepare the filling: Beat eggs on medium
speed until foamy. Add the rest of the ingredients (sugar through to the salt),
and mix until well blended. Pour the mixture over the crust and bake for an
additional 20 minutes, or until set.
Allow to cool, then gently sprinkle icing
sugar over the top.

I just commented today at work at how the rain was almost . . . pleasant. Or, it wasn't the icy hell-rain that we've had the last couple of months, anyways. I think those bars would be able to clear even the darkest clouds :)
