This weekend we needed a treat. He wanted something familiar, and I wanted something slightly out of the ordinary. What was a mom and wee boy to do?
Make brownies in a mini muffin pan, of course.
They're ready in half the time, and are twice as fun. And they're great for tucking into lunch kits for surprise mid-day treats. I love them so much, I might give up traditional brownies.
Two-Bite Brownies
1 cup butter, melted
1 cup white sugar
1 cup brown sugar
¾ cup cocoa
3 eggs
1 cup flour
1 ½ tsp baking powder
1 ½ tsp vanilla
Handful of milk or semi-sweet chocolate chips
Mix the first five ingredients until the batter is glossy.
Mix in next three ingredients until well combined.
Pour into greased mini muffin pan and sprinkle with chocolate chips.
Bake for 7-10 minutes at 350°F.
Man, when I was in university, my roommates and I could demolish a pack of these. Never thought about them since. Now I've got to whip out my mini muffin tin and make my own bag - to share this time, of course ;)

ReplyDeleteIt makes a few dozen :) I usually split the batter and make 1 dozen, then a small 8x8 pan of brownies, too.
