Mom Bakes Mondays: Happy Easter (Bunny)!

This little bunny hopped out of my mom's kitchen today just in time for our Easter dinner!
Growing up, my mom used to make my brother and me a special bunny cake every Easter. She decorated it with coconut, but my immune system has kind of killed that for her, so this guy is the resurrected allergy-free bunny. Seeing the look on the boy's face when I brought it upstairs reinforced why she always took the time to make him when I was little.

I hope you all had a wonderful weekend, whether you celebrated Easter, Passover, or the impending sale on Cadbury Creme Eggs (totally my holiday).

M&M Brownies

Candy in brownies? Why not!
It's been a week. You know those weeks? Yes, one of those. And now finally it's the long weekend and the boy and I have some time to decompress and reconnect. We spent today lounging around, doing some grocery shopping, and decorating Easter eggs. Holidays are infinitely more fun with a little one around, and his excitement is a bit contagious.

One of our favourite things to do together is bake. He's quickly caught on that it's a way we can spend time together, and if he asks late enough in the evening, he might just get to stay up a little past bedtime to taste one of the cookies or cakes we've made, curled up on the couch with a cold glass of milk and some cuddles.

The other night we whipped up these brownies, having impulse bought some M&M baking chips in the afternoon. I don't remember whose idea it was to add candy to the brownies, but I'd like to blame it on the 4-year-old.
(Okay, it was me).

Alton Brown's The Chewy

Meet my new favourite chocolate chip cookies.
My first blogiversary passed a week ago, and I completely forgot to do something special. I had a nice little bout of sinusitis/bronchitis/laryngitis keeping me busy. But just because I was occupied with the slew of itises doesn't mean I didn't find the time to bake.

The first Wednesday of every month my work has a potluck. It's my favourite thing ever, and is a great excuse to bake.  These cookies, Alton Brown's The Chewy, were my offering this month. The Chewy is an incredible chocolate chip cookie because it actually lives up to its name and reputation, and it's made with bread flour.  It's dense, chewy, chocolately, but not too sweet.  And it tastes just as good baked as it does in cookie dough form. This is rare, but important, non?

Mom Bakes Mondays: Peppermint Bark Fudgy Brownies

Every Christmas my dad gives Purdy's chocolates to his clients, and every Christmas my family is left with a surplus of the crap, like Peanut Butter Fingers and Peppermint Bark, that are held back as last resorts to the forgotten, or less important, clients. It's not that these chocolates are bad, per se, it's just that they aren't the same as a box of assorted creams, or even the mixed nuts (if you're the type to not die if you eat the latter). 


I think it's a sign to the appeal of the Peppermint Bark that it remains uneaten in my presence until April. It doesn't help that I'm allergic to it, but I can promise you that if a crate of Coffee Crisp were hanging around, I'd make myself a Benedryl cocktail, take a few days off work, and go nuts. But the bark is sickly sweet, and leaves a weird aftertaste.


Fortunately my mom is the creative type, and thought to mix it with our favourite brownie recipe. The results were a dense, chocolately brownie, with a layer of minty white and dark chocolate gracing the top. Trust Mom to take something unfortunate and turn it into something worthwhile and delicious. (Why she didn't think to do this to my hideously awkward pre- and teen self, leaving me to figure it out on my own, I will never know).
