Fudgy Peanut Butter Chocolate Chip Brownies

Let these delicious, chewy, peanut butter chocolate chip brownies make up for my recent neglect.
The past two weeks have brought about many changes. I've started a new job (hey guys!) and the boy and I have been adjusting to a new schedule. He's doing well, but I'm struggling to find time to take pictures of what I've been baking, since we leave and return when it's dark. I'm sure some of you wonderful bloggers and non-bloggers alike have suggestions for lighting I could look into-- please give me your advice! Baking just isn't as fun when I can't share every little detail with all of you.

Issues aside, I made these brownies one afternoon when I needed to provide a quick distraction for the boy. They were easy for both of us to put together (although, I've been told, he prefers to make cookies), and baked wonderfully. A perfect, simple, Sunday afternoon treat.


Fudgy Peanut Butter Chocolate Chip Brownies
adapted from Kitchen Simplicity

1/2 cup peanut butter
1/3 cup butter, softened
2/3 cup white sugar
1/2 cup brown sugar, packed
2 eggs
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup semi-sweet chocolate chips

Cream together butters. Beat in sugars, eggs and vanilla. Stir in flour, baking powder and salt until evenly blended. Fold in chocolate chips.

Spread into a greased 9×9 or 7×11 inch baking pan. Bake at 350ºF for approximately 30 minutes or until toothpick inserted in centre comes out with fudgy crumbs. Allow to cool before slicing.

  4. Why is it that I never have baking powder? Grrr. Brownies are my Achilles Heel! I'd eat the entire pan so it might be best that I don't have baking powder on hand. Maybe if I walk the couple of miles to the nearest store I'll head off some of the caloric damage.
