This bread is made with two ingredients, and one of them is ice cream.
Really.
(The other is flour).
A friend sent me this recipe yesterday morning, and I had to make it right away. Partly because I had ice cream I wanted to use up so I could make new stuff, and partly because this recipe is a bit of a mindfuck.
I was pretty skeptical, but it turned out fluffy and sweet. Everyone I made try it loved it too, and couldn't guess it was made with ice cream. (Guessing games are fun when it's not you that's guessing what the unknown ingredient you just ate is!)

Ice Cream Bread Recipe
2 cups ice cream, softened (I used a mix of homemade chocolate and mint chocolate chip)
1 1/2 cups self-raising flour (to make self-raising flour, add 1 1/2 tsp baking powder and 1/2 tsp salt for every cup to flour)
1. Preheat oven to 350F.
2. Mix ice cream and flour together until well combined. Pour into greased and floured loaf pan.
3. Bake for 35-45 minutes

ReplyDeleteI decided to surprise my fiancé by making this for breakfast today. It was a smash hit!! We used vanilla ice cream (all that we had on hand), but I will definitely be branching out into other flavors. Yum!
ReplyDeleteah... you said mindfuck and it made me giggle (shows how mature I am). Seriously thought, I do want to try this. Now to convince the BF we need icecream, ha, like that would be hard.
