Lemon Granita

What's better than having the perfect summer refreshment ready to go at any time?  



Lots of things, probably.  But this lemon granita is pretty nice, too.  Plus it's really easy to make, and lasts in the freezer for months.  It's basically an adult version of a snow cone.  Cool and refreshing, it has the perfect hint of sweet to balance the tartness of the lemon.  And it could be easily made into an even more adult-friendly treat with the addition of tequila!





Lemon Granita Recipe:
I've adapted this from several recipes


4 or 5 lemons
1/2 cup superfine sugar
3 cups of water

Peel several strips of rind from one of the lemons, but do not remove any of the white pith

Combine rinds, sugar, and water in a pot and stir over low heat until sugar is dissolved.  Boil for 4 minutes, without stirring.  Remove from heat and pour into non-metallic bowl to cool.

Squeeze 1/2 cup juice from remaining lemons and stir into cooled syrup mixture.

Transfer to a metal container and freeze.  Keeps for up to 3 months.
