Chocolate Brownies, minus the Fail

Remember a while ago when I made brownies?  Yeah.  Well I can now push that out of my memory because not only do I have a better recipe, but I baked them without injury, tears, or permanent damage to my kitchen.

This wonderful brownie recipe was sent to me by Angela, a fellow chocoholic who clearly has good taste.  They're fudgy, moist, but not too dense (so you can eat lots!), and I love how they're made with real cocoa instead of chocolate chips.  

They're definitely my new favourite.  I didn't have any instant coffee, so I couldn't make the recommended icing, but I just whipped up a simple icing sugar buttercream with some cocoa and it worked great.

Brownies (Susan Mendleson)

1 c.            Butter, melted
1 c.            White sugar
1 c.            Brown sugar
¾ c.           Cocoa
3               Egg
1 c            Flour
1 ½ tsp     Baking powder
1 ½ tsp     Vanilla

Beat first 5 ingredients.
Mix in next three ingredients
Bake for 30 min. at 350°F in a greased 9x13 pan 


½ c.            Butter, softened
1 c.             Icing sugar
2/3 c.          Cocoa
2 Tbsp        Milk
2 Tbsp        Hot water + dissolved instant coffee (1 tsp)
1 ½ tsp         Vanilla

Mix first three ingredients in a food processor.
Add liquids until desired consistency.

  2. it's the best! my mom uses a similar one, but with all white sugar and an extra egg. i definitely i prefer the addition of the brown sugar.

  3. I seriously just grabbed a piece of chocolate out of my desk drawer after reading this blog! And, I don't know if you've heard this before, but apparently instant coffee is supposed to be added to EVERY chocolate dessert (icing, pudding, anything) to bring out the chocolate flavour. I usually find coffee pretty overpowering, but who am I to argue with the professionals!

  6. I made these yesterday, and they are good but not great. A bit dry, and I took them out of the oven 5 minutes earlier than posted. The BEST brownie recipe is "Fonzie's Brownies" a recipe by Diane Clement from the former restaurant 'Tomatoes' in Vancouver, B.C.
    Just google Fonzie's Brownies - sooo moist and delicious! Henry Winkler's favourite!

Made these brownies and they were soooooo good! :) I didn't make the frosting because we like them without. :) brownies weren't as thick looking as the picture you have....can I either double the recipe and put into the 9x13 or just make 1 batch and use a smaller pan like 9x9? Would I have to change the baking time or oven temp? Thanks!
